I ran away from teaching to the country to grow veggies. There are also some chooks and a pair of troublesome goats who were so much trouble they had to go! My simple green life isn't always as simple or as green as I'd like...but I keep trying!

My american daughter in law was a little concerned about the 'funny' colour of the eggs from our chickens.   I suppose she is only used to mass produced pale imitations. Another blogger I recently read (wish I could find it again) wrote that she wouldn't want to eat an egg from a hen she didn't know.  I must agree with her.  Since having chooks I have come to realize that eggs are precious things ... a gift of shelled goodness to be marveled over and used reverently.  I hope I never have to go back to those insipid, cruelly produced commercial eggs ever again.

    That whipped white stuff they eat scared me!
    a nice yellow egg from a free ranging corn fed hen is hard to beat.

  2. Hazel, I hear you big time. I cant actually eat store bought eggs, dont know why, they just dont agree with me for some reason...I ate two of Audrey and Mavis's eggs on the weekend, and they were just beautiful and didnt leave me feeling ill at all..I am so glad to have fresh hen fruit again after such a long time...Flo laid again today , bless her, but the other two heffalumps got in on top and broke it...
    Eggs are treasure, just ask little m....

  3. It is interesting how people get use to what they eat even if it's crap. I find even commercial free range eggs can't be compared to the ones at home. And yes they are a precious thing and so are the girls who deliver them.

  4. Your scrambled eggs look delicious - I just wish we could keep chooks.... even the supermarket eggs here though have thicker shells and a brighter yolk than what they sell in the states.

    Apprently you shouldn't eat to many eggs i think its something like no more than 4 a week, its to do with cholestral...I eat about 8 eggs a week have for at least the last 30 odd years that I can remeber and my cholestral has always been good(and I'm a BIG girl)
    anyways I adore eggs and so do all my children.. only 1 time in my life i couldn't eat an egg was when I was pregnant with my 1st born ..it was weird

  6. Not only are eggs things of beauty, they are also pretty much essential ingredients in the kitchen. We use them in so many dishes.
    In the UK I think people are finally coming round towards understanding the benefits of Free Range egg (and chicken) production, but there are still plenty of people for whom price is the prime criterion - you can get 15 eggs for £2 in the supermarket. They can't be much good!

  8. I don't eat alot of eggs however I imagine your eggs taste much better than store bought ones. Similar to some fruit; if bought in the grocery store has no flavour but grown fresh it's totally differnt and good flavour. Kelli

  9. Hear, hear. Last night I had a dream about owning chickens...bantim chickens I think. Maybe I will make the dream come true one day...need to be home a bit more often. So shop bought ones for now that are hopefully are from chickens treated well.

  13. The different colours and patterns I find on my hen's eggs always amaze me. Some are spotty, some are pale, some have ridges, some are long, some dark, some tiny.

    The pictures look great!

  14. Totally agree! The way the whites rise up and hug the yolk...and the almost fluoro yellow of the yolk from all that eating grass whilst free ranging! Plus the coos and deep boks of contentment from the hens and the triumphant cackles and celebratory squawks when an egg's been laid!

  16. haha I too cannot eat eggs from chickens I dont know. Everyone who eats my eggs never goes back to the massed produced ones. And they all comment on the beautiful colour.

  17. Hehe...that was me, Hazel. I only want to eat eggs from chickens I know, and I think eggs are perhaps the most precious food source we have, because since we've had our own chooks we now know where the eggs come from, when they're laid, and what our girls are eating!

    I now want scrambled eggs for lunch! Your photos look amazing! :)
